This delicious, nourishing soup is simple to make and uses Rupanyup Living Produce Co. chickpeas.
Ingredients
1 medium brown onion
1 can of Australian tomatoes
2 Tablespoons tomato paste
6 pieces of bacon
1 cup of Rupanyup Living Produce Co. chickpeas, prepared by soaking overnight
1 stock cube (chicken or vegetable)
3-4 cups of water
1 tablespoon of olive oilÂ
Method
Drain and rinse soaked chickpeas and set to one side
In a large pot, fry onion in oil until soft
Add bacon and fry until cooked
Add chickpeas, water, stock cube, canned tomatoes, and tomato paste.
Cook for 45 minutes, until chickpeas are tender
Serve with a wedge of lemon and a dollop of natural yoghurt
