Greek-style pulled lamb on chickpea pancake


This super simple lunch idea is satisfying and full of flavour.  it features slow cooked pulled lamb on a Rupanyup Living Produce Co. savoury pancake, with fresh rocket, mint, dollops of Greek yoghurt and a garnish of pomegranate seeds.

I served this simple lunch at The Kitchen recently and it was a sold-out success. I'm sure your family will love it too!

Ingredients

Rupanyup Living Produce Co. Savoury Pancake Mix

Your favourite slow cooked pulled lamb using your favourite recipe

Greek style yoghurt 

Fresh salad leaves from the garden (rocket is perfect because of its peppery nutty flavour)

Fresh mint

Pomegranate seeds

Salad dressing (optional) - look for a dressing the combines sharp and sweet flavours to complement the lamb. You'll only need a small amount. 

Method

Collect all ingrediants and have them ready 

Make up the pancake mix, keeping the mixture thick

Heat a frying pan, adding a little olive oil and then cooking the pancake on both sides

When cooked, place a pancake on each plate and add a serve of lamb, dollops of yoghurt, fresh leaves and a sprinkle of pomegranate seeds before serving. 

If you wish, add a very light sprinkle of salad dressing across the top
